Weekly Menu 12/21+



Monday feeling as if I hadn't had enough veggies in a while I made broccoli and carrots and then


Cucumber Salad 

  • 2 diced seeded cucumbers
  • 2T minced onion
  • 1/2 c sour cream 
  • 1/2 c mayo
  • 1 tsp apple cider vinegar
  • 1T sugar
  • 1 1/2 tsp dill weed
  • 1/2 tsp?? salt
Mix it all up, chill if you have time, and serve.

Along with it we had one of the freezer meals that I swapped for in November.

Tuesday I cooked White Chicken Chili in the crockpot.

  • 2-3 chicken  breasts cut into 1" pieces
  • 2-3 carrots, roughly chopped
  • 1/2 onion, chopped
  • 2-3 stalks celery, chopped
  • 1 1/2 c chicken broth
  • 1 tsp cumin
  • salt and pepper
  • good sprinkling of garlic powder
Let all this cook all day on low.  When you get home, add in a can of Great Northern Beans, drained, and I also added a can of drained Glory brand Butter Beans instead of the second can of GNB that were called for.  Also a can of corn, drained and finally 1 1/2 c sour cream.  Let that all cook on high for another hour or until you are starving enough that you can't stand it anymore.

Wednesday I used up the last November freezer meal of quiche and neither L nor J were at all interested in that option, so L found a frozen pizza and cooked that up instead.

Thursday.... who knows.
Friday was leftover pizza night for J and L was out of town.
